One of the greatest pleasures in life, at least for me, is enjoying a good meal with a nice glass of wine. I believe that the education I was given throughout my life about food has been a treasure that I’m proud of.
Of course there were the classic table manners, waiting for the host to start eating, putting the napkin over your lap, never allow the elbows to touch the table, always eat whatever is in front of you, use the right utensils, know how to serve oneself and of course, how to set a table just as if someone important might come to dinner.
But the most important lesson of all had nothing to do with table manners. The whole “you can’t know if you like it before you try it” has been something that I’ve followed as long as I can remember. I’ve learned that eating with your eyes can be an eye trap, even your brain can “deceit” you. Something might “look suspicious” or “knowing what it is” might lead to not wanting to actually try it. But hey, if we lived by that, we might never know how great foie gras is!

I remember when I was around 13, we were in Galicia in the summer, to be more precise, it was the annual Fiesta del Pulpo in Carballiño, Ourense. As you might have guessed, it was my first time trying octopus. It wasn’t just the octopus, there was a whole celebration, dedicated to it. Needless to say that I fell in love with everything that surrounded me. It was more than just a mouthwatering octopus, it was the fact that people celebrated, danced and created a community.
All of this to say that my love for food is not just for the food itself, is for every aspect that surrounds it. Whether it’s a background story, a fun-fact or the origin of an ingredient, an idea or a recipe; there’s always a story behind a plate of food.
I’ve been lucky enough to try different styles of cuisine and different cooking techniques, I can only say that we have a marvelous culinary world and I’m here to explore every single part of it.
